Sausages are an excellent addition to any meal. They are easy to cook, delicious to eat and loved by everybody. Sausages can be barbecued, grilled, fried, roasted or poached.

Boiling sausages

Boiling sausages won’t give them a crisp exterior, but it will preserve the moisture and fat content within them. Boiled sausages look a little different than grilled or fried sausages. They are not crispy. But boiling is a good way for cooking sausages with other ingredients (stock, beer, herbs, etc.). Don’t pierce them. If you prick good quality sausages, you will let all the moisture and flavor out Just place the sausages in the cold water cover the saucepan with a lid. It will take up to 30 minutes to cook t hem.

There is no need to salt water for cooking sausages, as they are already salty. If you do not care what the sausages look like after cooking, then throw them into boiling water, but they will probably burst along during cooking

Simply grilled sausages

Grilling sausages is ideal for hot weather and summer meals shared with friends and family. The simplest way to cook sausages is to grill them either on a barbecue grill or in a hot pan. It requires very little amount of work and attention. For thin sausages, preheat your pan and add a small amount of butter or oil. Add the sausages and allow them to slowly cook, turning them every few minutes until they’re evenly colored.

Sausages should be cooked over moderate heat otherwise they will be burnt The higher the heat is, the faster the skins burn. It is important to keep an eye on the grill to avoid burning the sausages. You should turn the sausages regularly to ensure that they cook evenly and don’t burn. Before cooking the cellophane shell needs to be removed. Cellophane contains substances that, when heated, will not improve the state of food.

The natural shell sausages should not be cleaned as they are quite edible. For thicker sausages, either drop the heat to low and cook them for at least 25-minutes to ensure they’re cooked all the way through. Cook them in an ovenproof pan over a medium heat until they’re evenly fried, then pop the pan into a preheated 180C oven for 10 minutes, or until they’re cooked through.

Sausage meatballs

Roll sausage meat into small balls. Fry meatballs. Remove from pan and set aside.

In the same pan fry 2 diced onions,2 grated carrots, 2 grated zucchinis and 2 cloves of garlic. Then add the sauce and stir through. Add an extra 1/2 cup wine if sauce is too thick. Season with mixed herbs, add the meatballs back and simmer for 10 minutes7Add pasta to the meatball, serve with grated cheese.

Cooking Sausage in a Pan

Pan frying is the solution that will bring out the most flavor in your sausages and make them crispy. If you like, you can also add extra seasoning to them. Cook your sausages on low heat for 15 minutes, being sure to turn them over every 3 minutes.


Best Ways to Cook Salmon

The meal of the day is decided – today we are eating the yummiest and the healthiest dish ever – salmon. This is a fatty fish that is so easy to prepare and it is so healthy at the same time. Salmon is rich in heart-healthy omega-3 fatty acids, proteins and vitamins like B and E which also has an antioxidant peculiarity.

There are millions of possible ways to make salmon at home and in this article I, as an experienced cook of the family will share with you the best ways to prepare salmon so that the whole family is consent with the dinner.

We can either bake the salmon, broil, toss on the grill or eat it smoked, poached or in stews and even make fish cakes and burgers or add salmon to salads. We decide.

Let’s Pan-Fry the Salmon

The fastest way to deal with salmon fillets that provides the fish with a crispy, crunchy skin. In case you prefer plain dishes, you can add some seasonings like salt and pepper and some olive oil and place the fish on a hot pan. Let the fish get fried for about 5 minutes and then with the help of a spatula turn the salmon on the opposite side let it cook for 3 minutes.

Once it is ready squeeze some lemon and serve the dish, it is ready.

We can roast the salmon in the oven

Again a very quick and easy method. This method is especially helpful when you cook salmon for a bigger group as you can place all the fillets into the oven.

What do we need to do?

Firstly, we need to season salmon with salt and pepper and place on a baking dish but the skin side of the salmon has to be downside. We need to bake the salmon in the oven at 400 degrees for about 15 minutes. Alternatively, you can add other greens like dill or parsley to the fish and some vegetables if you don’t like it plain.

Why not grill the salmon

I am offering you another very simple method of cooking magnificent salmon – it is grilling. The taste of the smoke that is added to salmon fillets makes it even tastier and more appetizing. Once we have the hot coals ready we can place our lightly oiled fish again skin-side down.

After 5 minutes grilling we need to flip the salmon to the other side so that the salmon is well cooked from all the sides. The process needs to be done very carefully with the use of a spatula. If you notice that the flesh of the salmon is still sticking to the grate, let the salmon be grilled for another couple of minutes and try again. After another 5 minutes’ grilling the salmon is almost ready and we can check it to make sure out yummiest dinner is ready.

I have learnt this method from my husband as grilling is his thing and it is especially good when you taste grilled salmon prepared by your husband.

Fastest method? – Broiling Salmon

Broiling salmon is the fastest way of cooking salmon. You will not manage to leave the kitchen and the salmon is ready. Once the oven is on we can place flavored fish on the pan. Place the salmon on the top part of the oven right under the red-hot-glowing broiler very close to the heat source. Do not forget to check the fish in 5 minutes. If you feel it needs more time broiling as the outside is well done but the center not, turn off the broiler and keep the salmon in the oven for some more minutes to have a better result.


Best Ways to Cook Tofu

Tofu is a cheese like substance obtained from soy milk that is pressed into solid white blocks. It originated in China, and the process is quite similar to how cheese is made. It has mild flavor and versatile texture. It’s low in animal fat and calories but high in protein, amino acids, iron, calcium and vitamin B. This makes it the perfect substitute for meat. tofu can replace eggs and dairy, too.

It is an ideal food for vegetarians because it is easy to digest and contains no animal fats or cholesterol. Tofu is a good source of protein,it is also an excellent source of calcium, iron, magnesium, copper, zinc and vitamin B1. Tofu  is available in  two main kinds  silken or soft tofu, and firm or regular tofu .

Tofu is a product without taste and smell.Tofu is very delicious if it is cooked properly. It can be baked, broiled, marinated, scrambled. It makes a great addition to soups. It instantly turns soup or salad into a substantial meal that leaves you feeling full for a long time. I like to season tofu with salt, pepper, garlic powder, paprika, and whatever else I feel like, and then I fry it with some minced garlic and extra virgin olive oil. I cook it until crisps up on the outside but still soft inside. For this purpose, I use extra firm tofu and slice it into small pieces.

Here is one of my favorite recipes;

Broccoli and tofu in garlic sauce with rice

I cut the tofu into wide strips and fry it in the pan for 6-8 minutes.Then I fry the ginger, garlic and paprika in 1 tablespoon olive oil until they become fragrant, add half of the spring onion and fry for another minute. Then I add 250g boiled rice and fry for about 5 minutes, add 200g blanched and chopped broccoli. In a separate small bowl I mix together soy sauce and water, then add this mixture to the broccoli and tofu, cook until  the sauce thickens.

Salad with tofu, tomatoes and cucumber

For this delicious salad I take 450g firm tofu, rinse thoroughly and cut it into small cubes and place them in a medium sized mixing bowl.
In another bowl I add 1 teaspoon basil, 2 tablespoons wine vinegar, ¼ teaspoon oregano, ¼ cup olive oil, ½ teaspoon black pepper, 1 teaspoon salt and mix all these ingredients thoroughly, to make a marinade.Then I pour the marinade over the tofu cubes and set it aside for an hour or so.


In the mean time I separate the leaves of the lettuce head, wash them thoroughly and dry.
After an hour I add the sliced cucumbers, onion, tomatoes and black olives to the tofu and mix all the ingredients lightly.
I spread the lettuce leaves on a plate and pour the tofu and vegetable salad over them. The salad can be served immediately, or can be placed in the refrigerator for a short while.
